chia seed vinaigrette

Please enjoy these two raw salad dressing recipes that you can whisk up in a jiffy. No blender required!

Citrus Honey Chia Seed Vinaigrette
1-2 servings

This raw salad dressing recipe uses chia seeds as a slight thickening agent!

2 tablespoons apple cider vinegar
2 tablespoons fresh orange juice
2 tablespoons fresh lime juice
2 tablespoons cold pressed flax oil
1 tablespoon raw honey
1 teaspoon chia seeds
½ teaspoon finely chopped mint
1/8 teaspoon fresh lime zest
Sea salt and freshly ground black pepper to taste

Whisk ingredients with a fork in a small bowl. Let sit for at least a half hour and then pour over your favorite raw salad greens. (In the picture above I used this dressing on a bed of butter lettuce, sliced pears, walnuts, and pomegranate seeds.)

Easy Cheezy Tahini Dressing
1-2 servings

This raw salad dressing recipe reminds me a little bit of blue cheese. Enjoy!

2 tablespoons raw tahini
2 tablespoons lemon juice
2 and 1/2 teaspoons chickpea miso
1 and 1/2 teaspoon chopped fresh oregano leaves (can substitute for dry if fresh are not available)
5 tablespoons water to thin

Put all the ingredients in a small bowl and mix with a fork until well blended. Pour over your salad greens; it’s especially good over cucumbers and parsley.

Thanks for the salad dressing recipes! I can’t wait to try them both. Where do you find chickpea miso?
